Make fragrant Izumo soba at a soba restaurant
Okuizumo is a famous soba production region where you can find many Izumo soba restaurants. Among them is "Yamaken Soba," where a soba-making workshop has been set up to offer a hands-on experience to many visitors from within and outside the prefecture.
The only ingredients required are water, buckwheat flour that is coarsely ground in the early hours of each morning, and some flour for kneading. Water is gradually added to the buckwheat flour while it is kneaded continuously until the dough becomes sticky. It is then rolled out using a rolling pin and sliced with a kitchen knife to form the soba noodles. Soba noodles that you make yourself have an exceptional taste.
